Being new to the whole "modding" thing.... how would one go about cutting that peice down? A Dremel?

A sharp knife, razor, or a dremel will work fine. Just don't cut any fingers off.

I have a background in miniatures/wargaming so no stranger to using tools for modelling/kitbashing. Just wasn't sure what the best approach was when it came to Lego.

That would be the best option, though you'd still have to use an X-acto knife to trim the edges and excess plastic.

When working on such a small piece, how do you guys hold said piece to work on it so it doesn't move?

Um.....I still have problems with that aspect I have heard that people use small clamps, but usually what I do is wear some thin gloves, because the cutting disc on a dremmel at lower speeds won't hurt you. A drill bit on the other hand.....Check out you tube for some tutorials that might have a better answer.

I will use needlenose plyers, you can put something 'soft' between the item and those to prevent scratching.
I've also found that if cutting directly down doesn't flow well, I'll cut at a sight angle. I also gently shave the edges to get rid of the 'off' color and bring the piece back to it's original one.

I generally use a heavier xacto knife for most hair modding. I don't have a dremel.
