Xbox is out. PS3 has better graphics, IMO.

They're actually pretty equal on most games... Xbox actually has better graphics on some of the multiplatformers. Besides, as SV has stated before, Aesthetics > Graphics

Hey MC or Sentinal, should I start with ME1 or is it alright to jump into ME2? Will I get the story at all without playing the first all the way through? I started the first one on my PC but I never got very far.

It's fine starting off with ME2 (I did) but I like ME1 too much to not recommend starting off with it.
