Yeah, there are many over-done minifigures which is kind of pointless to me but I have seen some really well done paint jobs too.

Once I saw a Wolverine minifigure on Flickr that was covered in painted clay. The fig didn't show any plastic except for his hands and face, which were still pretty heavily modified. His cloths were clay, with painted highlights. It, looked, awesome. Regardless of its lack of resemblance to LEGO. So there is a line that isn't to be crossed, although, you can still modify a figure a good amount before crossing it.

Personally, I prefer less realistic minifigures. I like painting them but I usually try to go light on the details. That's one of the main reasons I prefer BrickForge over say, BrickArms or BrickWarriors; the pieces look like they could have been made by TLG so they fit in better than the more realistic weapons of BrickArms.
